Most people today suffer from a lack of Essential Fatty Acids
(EFA’s), especially the all important omega 3’s because our diets have changed
so radically compared to a hundred years ago.
At the turn of the last century people ate oily fish
nearly every day of the week. Diets were rich in herring, mackerel and
salmon. Meat was a luxury few could afford regularly. And heart
disease was practically unheard of.
But today it’s the opposite. We eat 80% less fish than we
used to, but a lot more meat, cheese, margarine, cakes, pies, pizza’s,
pre-cooked and fried foods. All of which are loaded with saturated fats

Trans fats from margarine and pre-cooked foods are the
worst culprits, blocking normal conversion of cholesterol in the liver
and increasing the amount of LDL (bad) cholesterol circulating in your blood
stream – causing arteries to narrow and bottlenecks to occur.
Plus they tend to make your body produce pro-inflammatory hormones, which can
trigger ‘inflamed’ conditions like heart disease, arthritis, eczema, or
asthma.
Some scientists believe that the lack of Omega 3’s in the
American and Europeans diets is directly linked to the high levels of western
degenerative diseases and even certain brain function disorders such as ADHD and

- Eat more oily fish - herring, mackerel and salmon – Eskimos who live almost
exclusively on fish don’t get heart attacks because their omega
3 intake is so high
- Stay away from margarine and eat butter instead, it’s still high in
saturated fat but at least it’s a whole food and comes with its own antioxidants
to keep its fats from being oxidised by free radicals and turned into LDL
cholesterol which as we have seen is prone to stick to artery walls.
- Use cold pressed olive oil on salads and fried foods, wherever possible
- Eat more nuts, seeds and whole grains
- Minimise consumption of white bread, cakes, biscuits, crisps and
precooked foods because they’re all made using trans fats.
